I personally have a dog door with a fenced yard for my two dogs and have spent a lot of time training them so I trust them with the dog door open when I leave the house. For other people's pets, I will of course follow their rules if they crate or leave them free roaming in the house.

I will need to know reactiveness, how well they are trained, favorite treats, daily routine, any medical conditions and how to work with it, if they are sick, up to date on vaccines if they do a day care at my house, where they like to be pet/held, how well they are around other/new dogs, if they are food motivated or not, and if they are toy or food possessive.

If walking, I let them actually stop and sniff because that's part of the fun for them. Getting out of the house with new things to smell and look at helps stimulate them and they look forward to that all day so I would never deprive them of that. I love kicking and throwing a ball/toys around the yard with them and just being goofy until I tire them out for a while.
