message to sitter?
I don't see how to send a message to a sitter after I've sent a request.

If you have created a booking request and sent it to a sitter the booking should appear on your Rover dashboard under the pending tab. From the booking request, you can send additional messages to the sitter. If you turned on the text option you should see a text on your phone.
