How to politely decline a housesitting request?

I had a home meet and greet for a possible housesitting job around Christmas. The problem is the owners smoke inside, and after about half an hour, I smelled strongly of smoke. I have a lot of health issues that are exacerbated by cigarette smoke. There's no way I can housesit and not harm my health. How do I politely decline? I'm afraid it will sound like, "Ew your house smells" if I'm upfront about it. I don't want to make her think she has a sitter and then bail on her. Thanks for the advice!

Usually, it's simplest and best to just tell them you're not the best match for them (and not elaborate). Instead, you can re-direct them to Rover support who will try to help them find a great match. If you're inclined, you could contact support and let them know it's a smoking household and you're sensitive to smoke (with optimism that could help in finding the right person).
