I have lots of experience with this one. In my experience, most people will touch the dog by the time I politely try to explain that I would like them not to, whatever the reason (in training, shy, etc.) and a lot will continue to touch the dog. I've even explained to a stranger that the dog is not friendly (and he wasn't) and they argued with me that he looks friendly while continuing to try to touch him.

If the person gets in close proximity, I will say something along the lines of, "No, don't touch," assertively (but remembering to stay calm for my canine buddy). That will usually stop them as perhaps they think the dog might not be friendly. When they no longer attempt to touch the dog, I very politely offer the explanation. It may simply be, "I'm sorry, he's in training not to jump on people and I can't let him be pat if he's jumping. Would you like to ask him to sit?"

Dogs are more cognizant than you might think. They can sense feelings like when we are anxious or calm. A change in vocal tone, body language, or hormone scent can influence your dog's perception.

It is also a good idea to rule out food allergies, common in many dogs, and look at your current dog food choice.

I always recommend using a dog specific shampoo. Even baby products could possibly have an ingredient not suitable for a canine. Most puppy shampoos are just cherry or powder scented dog shampoos that are marketed to puppy owners. It's most important to choose a natural tearfree dog shampoo with simple understandable ingredients listed. That goes for humans too!

That would depend on what the allergies are. Most dogs with sensitive, itchy skin and slight allergies usually do well with a natural oatmeal or tea tree shampoo like ones with simple ingredients from Espree or Earthbath. Sulfodine medicated shampoo may not smell as pretty but is good for dogs with more severe allergies when typical shampoos are ineffective. Also, I usually recommend using hypoallergenic pet wipes on paws and affected areas for seasonal allergy sufferers after walking to remove pollen and other possible allergens, especially if they're chewing their paws or have stained paws and/or fur loss.
