How does rover work on a road trip with an older dog?

I am planning on taking a road trip with my kids and older dog this summer. I was looking into Rover as an option for my dog when we are doing non-dog friendly activities. I was wondering how this might work with a hotel? For example, can I just ask someone to come sit with my dog at the hotel while I take my kids to the pool? Since he is older he doesn't really like walks but I also don't want him to feel alone in the hotel when we leave for a bit.

I don't feel comfortable leaving my dog home with someone in case his health deteriorates. He is a relatively healthy 14-year-old and I plan on checking with the vet before travel but I am his person and he just constantly searches for me if I am not around so I don't want to add to his stress. He is a pretty good traveler in the car and I plan on frequent breaks (which I would need to do with the kids anyways).

I've never used Rover before. I've looked through some of the basics but if I am missing something obvious, please let me know.

I’d suggest that in advance of starting on the road trip, you read through the profiles and contact at least two people that you think would be the best match. You ca choose to tell them that you’re looking for two sitters you can alternate between trusting with your dog’s care (in case one isn’t available).
With your scenario I would probably be looking for someone who takes one client at a time, doesn’t have kids or pets of their own, and is retired (not going to school nor working elsewhere). Rover doesn’t have a service that exactly fits what you want. You could search services as a daycare or drop in visit, then in messages to the sitters you contact let them know that you want them to stay with your senior dog either in the hotel room or walk nearby the entire time. I think that will be the easiest for your dog to adapt to and not have nervous stress. Also feel free to ask them any other questions relevant to your dogs care that might help you get to know them better.
