It can vary. Different people will provide different answers: some stay overnight, some don't. Also, there's much discretion over how much time is spent at house, whether the sitter is leaving for walks/drop in visits of other pets, school, another job, or other personal reasons.
Rover suggests that house sitting covers up to 24 hours of care, but the pet parent and sitter are free to make their own agreements. So, I's suggest reading profiles closely to help determine who may be a match for your pet, discuss/confirm with whoever you're considering, and before booking it - document whatever was agreed upon in the rover messages.
