How do I adjust rates after the fact if, for example, a 30 minute drop -in visit has to be extended for unforeseen circumstances?

How can I add additional charges after the completed service for a 30-minute drop-in visit that turns into a 2-or 3-hour vet visit or other circumstances that were not planned when booking the visit?

After discussing the situation with the owner I think you can either extend the stay or create a new booking to cover the time spent.
