I always prefer to keep as much of the messages as I can on the Rover platform, in case I need support to be able to follow the conversation and be aware. However, you can choose to do that with a client if you want.
I'd stress that I absolutely suggest you do not take the conversation to email before it's booked, for your safety. Some times, scammers will ask for a lot of personal info and immediately request discussing on personal email.

Thank you very much this was helpful I just had a client ask for my email to give details of her dog and photos too I just immediately replied back with I don't give out my personal email to unknown people and then I turned it into http://rover.com because I had already turned down the request for walking.
