Will raising prices effect the bookings that are already in place? If they do, can I still somehow keep the prices the same for the clients that are booked?

I have 2 weekends already booked to dog sit upcoming this month, and I want to know if I raise my price now will the prices change for those bookings or will they remain the same. If they do update with my price change, is there a way I can keep their stays as they are priced now?

Yes it’s actually a great excuse to reach out to all your clients to let them know they get to keep a preferred rate. None of mine have ever been upset, usually happy that I’m in demand enough to increase and it only takes 2 seconds to modify with discount rate- it’s reflected their end looks great

If you raise your price, it will not affect any bookings already made. The customer has already paid for them.

If you want to keep existing customers at the old, lower price, then you will have to manually adjust the booking when it is submitted to you. That's rather easy to do. Just inform those clients that, while you will be raising your rates for new clients, they will continue to receive the old rate despite what the profile states.
