why is rover is not applying my house sitting rate properly?

My in home stay rate is $60 per night but its only charging them the rate for 1, 30 minute visit per day and then if its more than one animal the extra for that. For example I just had a request for a 7 night in home stay and the total they were charged would have been $112.50 and that is before Rover takes their 20%. Who in their right mind would in home pet sit for a week to only get paid $90?

This sounds like something you need to resolve with Rover Customer Support. Give them a call at [Edit: Rover’s contact options have changed. Visit the Rover Help Center at https://support.rover.com/ to find the phone number, help articles, or chat with the team]. I took a look at your rate table and couldn't find anything amiss that would affect the scenario you described. There was one oddity, though. Under drop-ins, the rate listed for bookings of 9 days or more is $100 per visit. That's probably not what you intended.
