Hi! As mentioned above, keep your greetings low key. Ignore the dog until he's calmer, and once you greet the dog, pet it with long, slow strokes and don't say anything. If he jumps up, stop interaction and turn around. You can also keep some treats handy, and calmly feed a treat for sitting patiently. Hope it helps!

Get yourself a sit and stay first, then let the new person come to the house or yard.

Make sure your greetings are calm. And preferable outside! ;)

Just watched a dog who peed anytime she was exited or nervous. Small dog, so we tried not to reach down to her because that would cause it, so instead we'd go down to her level.

From http://drsophiayin.com/blog/entry/piddling_pooches (Sophia Yin's Webite):

When family and friends come to visit, instead of petting and playing with the piddling pooch they should ignore the little guy for several minutes or until he has calmed down. Once he's standing or sitting serenely, they can try some placid petting. They should start with slow, even strokes paired either with silence or soft, soothing speech.
