Most house sitters supply there own food while staying in your home. And many owners may provide some beverages after discussing the stay with the sitter. I've had several clients leave bottled water, a nice bottle of wine and a cheese tray and I was very apreciative of the jesture.

When hiring a house sitter, always discuss every single thing prior. Don't rely on any expectations or assumptions. It's your decision, and you make your rules. If you want the sitter to stay over night, or for several nights, you need to make sure you tell them how you want this stay to go. You need to discuss sleeping situation, food, coffee, coffee maker, towels, shower, friends, visitors, over night guests, parties, drinking, smoking, how many hours the sitter needs to stay and when she can leave etc.

You are not expected to provide anything, but if you want to, that's absolutely fine.

I have seen a lot of people complaining after the stay, saying the sitter ate their food, used their coffee maker, touched their coffee cups, had sleepovers with men or friend. To my surprise many people allow the sitter to have parties, alcohol and boyfriends in your bed etc... but the best way to go is to sit down prior the stay and discuss every single thing possible to avoid accidents/stolen items/ or damaged property.
