No, it just means there won't be a 'call' option when clients send you a booking request. If you select After you've booked a stay then clients you currently have a stay with or repeat clients can call you from the app, while Anytime means current and repeat clients as well as unbooked/unconfirmed clients can call you thru the app. If you select Never then there is no option to call you. You can further select that option on a client by client basis, so you could select "never" now, but if there's a client you want to be able to call you, you can change the settings on the clients booking page.
Do I pay for the service before a meet and greet or any other type of contact?
No, although you will need to submit payment before the booking is completed. Search for sitters in your area, click 'contact sitter' and send them a message. Ask for a meet and greet and discuss what you are looking for and your expectations with the sitter. After the m/g is when you'd confirm.
