Where would I find a total of the fees I've paid to Rover this year?

I need a total of fees I've paid to Rover for my tax return. Is that something I need to figure out myself or is it listed somewhere? I can't seem to find it.

Your Payment History is here:

https://www.rover.com/account/payments/

There is no total for the fees you've paid to Rover. You would have to add them up yourself. However, I would wonder why you need it since for tax purposes you would only report the amount remitted to you. There's no benefit to grossing up your income so that you can subsequently deduct the fees as expenses. No reason whatsoever.

I’m not a tax professional but I was thinking it would be an expense that I would add in with all my other expenses for the year.

It isn't an expense, unless you GROSS UP your revenue. Rover pays you a net amount. It would have to be added to the amount Rover pays you in order for you to claim it as an expense. You don't want or need to do that.

Lyft and Uber take a cut like Rover does and you are required to report your gross income as the amount earned before they take their cut. I am assuming it is the same for Rover but not positive!

Rover fees withdrawn are not considered income to the sitter, and are not reported or deducted for tax purposes

I am not so sure this is true (anymore?). Lyft and Uber take a cut like Rover does and you are required to report your gross income as the amount earned before they take their cut.
