How to add fees to current booking?
How do you add cost to a current booking? I want to know for when I have to charge extra for an overstay.

If you contact customer support, then can help you set this up. Or else, if you've watched the dog before, you can go to past customers, and send the owner a request for the extension.
You do have that option via the Extend a Stay function. On the Help page I linked for you yesterday with step-by-step instructions, you will see this screenshot:
To the right of the blue Extend button, it says: "You can adjust the dates, dogs, and price on the Message page before you finalize." Therefore, if you want to charge an hourly amount times the number of hours over, then you would plug that in as the rate instead of your nightly one.
It looks like the only option right now is to add on an extended day stay. I was trying to set up an hourly fee for the stay going over 24hours, but it looks like I'll have to drop that idea. Doesn't seem fair to charge a full days stay when the pickup is a few hours late. We should have the option to request our own amount and to modify the booking in play.
