Have you ever done clicker training? Or used pressure to train?
Either one will work here. Reward for giving the paw, apply pressure when they fight you.
Once they figure out the concept, they'll tolerate it, and then it is just conditioning them to the new equipment. Take on walks and make it a positive experience with clicks, treats, smells, high energy walking, etc.
