Can Rover add check in check out times to the booking process?

Recently, I had a fur-guest stay from 7 am one day to 11 pm the next day. One night but clearly over 24 hours and only 1 day pay. It also prevented me from taking another guest.

I have initiated a Check In Check Out time (similar to hotel stays) for my guests or a Day Care Rate would apply. Does anyone else do this and could Rover include that in the booking process?

Adding dropoff/pickup times has been mentioned to Rover numerous times and discussed a great deal here. If you search through this board, you'll find that sitters that have their own unique way of charging. Some charge per night, regardless of the total amount of time a dog may be staying with them. There are others who charge an overnight and then a daycare on every "boarding" visit and then may charge for walks as well. So, tying the check-in and checkout times to the rate table would establish uniformity of billing. However, all Rover sitters are independent contractors and can set their own rates and billing methods. I would like to the request process to include planned dropoff and pickup tmes, but doubt they would ever been lined to the rate tables because of the lack of uniformity of billing I've seen here.

Getting that information upfront, before the booking is completed, allows you to modify it to reflect additional charges. I always discuss this with the client. While not as stringent as a hotel, I do give customers a couple of hours leeway. I also don't accept dogs that early in the morning. There are sitters who wouldn't allow a pickup at that late time either. I don't consider myself a 24-hour Starbucks. If a client has an early departure, then I recommend dropping off their dog the night before, which often works out for the better because they're returning later in the evening and it all balances out.

In your case, I would have just charged for an extra whole boarding day. 7 am to 11 pm isn't daycare. It is another night of boarding. But I see that you charge the same for those services, so it doesn't really matter how you charge it.
